We’re eating passion fruit by the bucket load at the moment. My gorgeous in-laws have a couple of vines that have outdone themselves this season. They’re sweet, plump and juicy (the passion fruit that is). I wasn’t sure what to do with them and I didn’t want them to go to waste, so we’re all just tucking into a couple a day.

But the other night I went a little crazy and made our smashed meringue for dessert using mum and dad’s passion fruit. Well...what can I tell you? The result was out of this world. I didn’t have any light muscat (dang), so we opened a sparkling white (from Tassy) and sipped and supped. Everyone loved it.

Has anyone tried our smashed meringue recipe yet?

as for the extra passionfruit, you can save all the juice & seeds in a sealed jar for up to six months, without any loss of flavour & richness. This way, you don't have to miss out on this fruit in the lean months.
